Blackened Salmon with Olive Relish

 

Ingredients:

 

4 8oz Salmon Fillets

4 oz of Chef Paul Prudhomme’s Blackening Seasoning

4 ½ oz of Olive Oil

 

For the Relish:

 

½ Cup Sliced Green Olives

¼ Cup Sliced Black Olives

½ Cup Shallots

½ Cup Chopped Sun Dried Tomatoes

¼ Cup Julienned Basil

¼ Cup Capers

3 Teaspoons Crushed Red Pepper

½ Cup Balsamic Vinegar

½ Cup of Olive Oil

 

Mix relish ingredients in a large bowl and let stand at room temperature for 30 minutes.  Drizzle salmon with olive oil and coat with blackening seasoning.  Pan fry salmon 3 to 4 minutes each side for medium rare.  Top with relish and serve.
